Recipe: Shrimp and Avocado Salad

Here's another great Lenten dining option.

Do you observe Lent? Are you tired of the same old stuff for lunch and dinner? If you can answer "yes" to either of those questions, here's a great pre-Easter meal that's refreshing and different. It's called, simply, shrimp and avocado salad. You can eat it by itself or between two pieces of bread, and it's good for either lunch or dinner. Recipe: Potato Cheese Soup

With a little improvising, you can put your own personal stamp on this great potato cheese soup recipe.

Who doesn’t love making a great soup? We spent the past week buying fresh ingredients and stewing up a tasty potato cheese soup using this reciple from AllRecipes.com. It’s easy to make and tastes great. With a little improvising, you can put your own personal stamp on this great recipe! Cut the potatos and carrot into large chunks. In a large pot, cover the potatoes and carrot with water and boil on high heat for about 15 minutes or until tender. Meanwhile, in a large skillet, saute the celery and onions in the margarine for about 10 minutes. Drain all but about 2 cups of the water from the potatoes and carrots and add 4 cups of milk. Zero-Heartburn Salsa Alternative

Here's an alternative "salsa" recipe that doesn't leave me with big-time heartburn.

For the past few months, I've been following a low-acid diet to help curb some wicked heartburn issues—which means cutting out tomatoes and citrus fruits, greasy, high-fat foods, and anything with caffeine. That's tough. If you're dealing with those issues, too, you know it can be really hard to find great-tasting foods—especially snacks—that don't set off your symptoms. I've been altering recipes and experimenting with my own a lot lately so I can snack safely. Here's a "salsa" recipe I've been playing around with, and this mix is always changing. Recipe: Crispy Onion Chicken Tenders

A tasty way to have crispy tenders without frying them.

I love chicken tenders, but I don't like to eat greasy food too often. I was happy when I found this recipe, and it's one of my new favorites! Ingredients: What to do: 1. Preheat oven to 400 degrees. 2. Put the fried onions and flour in a plastic bag. Crush them until they are mixed well. Pour into a plate. 3. Dip tenderloins into egg and then coat with onion/flour mixture. 4. Place chicken on a baking sheet and bake for 20 minutes or until the center no longer is pink. Enjoy! I like to eat. So, one night, when my wife—yes, Mrs. B-W Patch—cooked up some whole wheat pasta with chicken, spinach and feta, I thought, "What else could we put in this?!" With this unseasonably warm weather moving into western Pennsylvania this weekend, break out the grill and try this healthy and tasty salmon recipe. This grilled salmon recipe I found on AllRecipes.com offers a soy sauce and brown sugar marinade that will have your mouth watering.   First, season the salmon fillets with lemon pepper, garlic powder and salt. Then, in a small bowl, stir together soy sauce, brown sugar, water and vegetable oil until sugar is dissolved. Place the fish into a large Ziploc plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours. After that, preheat the grill on medium heat. Growing up in Miami, my family's biggest Christmas celebration always was on Christmas Eve or "Noche Buena." In the Cuban culture, families get together on Christmas Eve for a massive pig roast with many, many side dishes. Ever since I moved to Pittsburgh almost 10 years ago, Christmas meals have been more traditional—turkey, ham, mashed potatoes—given that it's too cold to sit outside and cook a whole pig and it's just not that common around here.
