Black Bean and Red Pepper Salad

Beans are not only one of the most versatile foods around, but they are also one of the healthiest, providing both fiber and protein to your diet.

You can make dips, soups, spreads, salads, and even desserts with the many varieties of beans. They are easy to make, easy to store, and very inexpensive.

Here is a simple and cost-effective Black Bean and Red Pepper Salad. Make sure to bring this dish to one of your last summer picnics of the year. Your friends and family won’t be disappointed!

Ingredients for bean salad

  • 1 can (16 ounces) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 1 cup thinly sliced celery 1 cup thinly sliced green onions

Cilantro-Cumin Dressing

  • 1/4 cup chopped, fresh cilantro
  • 5 tablespoons olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon ground cumin

Directions:

1.) Combine the beans, peppers, celery, green onions and cilantro in a large mixing bowl.

2.) Whisk the oil, vinegar and cumin in a separate smaller bowl.

3.) Pour the dressing over the vegetables and stir until thoroughly coated.

4.) Let stand 15 minutes to blend the flavors, or refrigerate up to 2 hours before serving.

5.) To serve, spoon the salad onto a bed of lettuce or greens.
