Guiltless Ice Cream

This week's column from Food Mood Girl Lindsey Smith puts a healthy spin on a favorite treat.

Between baseball games, amusement parks, and after dinner treats, ice cream is a summertime staple that can be found almost anywhere.

While this summer treat is delicious and cooling, it is often highly processed and full of additives, sugar, and fat. So next time you are in the mood for a cooling, ice cream treat, try this simple, easy, and healthy recipe instead! You will not only curb your sweet tooth and cool down, but you won’t experience the crash processed ice cream leaves you with.

Chunky Monkey Ice Cream (1 serving)

  • 1 peeled and frozen banana (I suggest you cutting the banana into chunks then freeze)
  • ½ cup almond, coconut, or rice milk
  • 1 Tablespoon Peanut Butter
  • 1 Tablespoon Dark Chocolate chips or Dairy-free chocolate chips

1.) Blend banana, milk, and peanut butter in a blender or food processor until smooth and creamy

2.) Put “ice cream” in a bowl, sprinkle chocolate chips on top, and enjoy!
