A Cooling Recipe to Beat the Heat

Health Coach Lindsey Smith offers up a tasty recipe to keep you cool and healthy in this summer's heat.

This summer has been one of the hottest summers recorded in not just Pittsburgh, but the entire United States. We have been seeing droughts, heat advisories, and cooling shelters popping up all over the city.

To help beat the summer heat, it is important to not only drink water to keep hydrated, but to eat cooling fruits and vegetables that will help nourish and cleanse your body during the hot summer days.

This Spinach and Strawberry Salad provides cooling and detoxifying elements to help keep you cool, satisfied, and refreshed. It’s also quick and easy to prepare which makes it a great recipe to have on hand to take to your next summer picnic.

Spinach and Strawberry Salad

Salad:

  • 5 cups of fresh baby spinach
  • 1 ½ cups of strawberries, sliced
  • ½ cup of walnuts, crushed

Lemon Drop Dressing:

  • 3 tablespoons of fresh lemon juice
  • ¼ cup olive oil
  • 2 teaspoons honey
  • 1 bunch finely chopped fresh basil

Directions: Combine salad ingredients in a large bowl Prepare salad dressing in a small bowl Pour dressing over salad and enjoy!
