Recipe of the Week: Wheat Germ Whole-Wheat Buttermilk Pancakes

Try this healthy breakfast alternative.

I found this recipe on AllRecipes.com when I was looking for some new, healthy weekend breakfast recipes.

I’m usually craving greasy bacon and a plate full of scrambled eggs, or a stack of pancakes covered in sugary syrup. Those probably aren’t the healthiest things I could eat though…

This recipe for wheat germ whole-wheat buttermilk pancakes got great reviews on the website, and I’m willing to give it a spin for a healthy twist on a delicious breakfast.

Here’s what you need:

  • 2 eggs, lightly beaten
  • 1/4 cup canola oil
  • 2 cups buttermilk
  • 2 teaspoons baking soda
  • 1/2 cup wheat germ
  • 1/2 teaspoon salt
  • 1 1/2 cups whole wheat pastry flour

Here’s what you do:

  • In a medium bowl, mix eggs with oil and buttermilk. Stir in baking soda, wheat germ, salt and flour; mix until blended.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.
