Recipe of the Week: General Tso's Chicken

A tasty, classic Chinese meal.

I love Chinese food, so when I found this pretty easy recipe on Food.com for General Tso's chicken, I really wanted to try it. The recipe calls for you to make your own sauce, but I bought a bottle of it at the grocery store. It was delicious.

I served my chicken over white rice, though you can pair it with fried rice, noodles, vegetables or whatever you'd like.

What you need:

    3 pounds of boneless skinless chicken breasts or tenders cut into chunks
    2 cups sliced green onions
    8 small dried chilies, seeds removed
    1/4 cup soy sauce, low sodium preferred
    1 egg, beaten
    1 cup cornstarch
    1 bottle of General Tsos chicken sauce
    Vegetable oil to fry the chicken

What you need to do:

1. Mix cornstarch, soy sauce and egg in a bowl. The texture will be thick and paste-like.
2. Add chicken pieces to coat. Using a fork remove one chicken piece at a time and let the excess mixture drip off.
3. Coat a pan with vegetable oil and let it heat. Add chicken to the hot oil and fry until crispy.
4. Once all the chicken has been cooked, remove it from the pan. Drain the oil and add onions, peppers and the General Tso's sauce to the pan. Fry for 30 seconds and add chicken again. 
5. Cook until the entire mixture is hot a bubbly. Once it's finished, serve over white rice, fried rice or noodles.
